“Marry Me” White Bean Dish
Base Ingredients:
• 2 Tbsp. Butter or Plant based Butter
• 2 Tbsp. Chopped Onion
• 4 Cloves of Garlic minced
• 1/2 teaspoons each of Sea Salt, Smoked Paprika & Crushed Red Pepper
• 1 Tbsp. Chopped fresh Basil
• 1/4 teaspoons Black Pepper
• 1/2 cup of Sun Dried Tomatoes
• 1/2 cup of Vegetable Broth
• 1 cup of canned Coconut Milk
• 1 can of White Beans (butter beans or great northwestern)
• 1 cup of chopped Spinach 16 oz Tofu or other Protein (Chicken, Mushrooms, etc.)
*Cook Tofu or Protein first, Preparing the Tofu:
• 1 16 oz. block of Tofu drained and cubed
• 1/2 teaspoon of Sea Salt
• 1/2 teaspoon of Garlic powder or other favorite seasoning blend
• 1 tablespoon of Olive Oil
• 1 1/2 tablespoons of Arrowroot powder or Cornstarch
Pre heat air fryer to 375. Toss cubed tofu with Olive Oil, Arrowroot powder and seasonings. Place seasoned cubes in an even layer in air fryer basket. Cook for 15 minutes or until crispy.
Combining Ingredients:
In a skillet on medium heat melt Butter. Add Onion, Garlic and remaining seasonings. Next add Sun Dried Tomatoes, Vegetable Broth, Coconut Milk, Beans and Spinach. Gently stir in prepared Tofu or other cooked protein. Top with chopped fresh Basil. Enjoy over Rice, Quinoa, Pasta or with Bread and enjoy!
